I know basically nothing about paints, but we have a bay toby mare that is bred to my sorrel stud. Any way of guessing chances of color?

well a bay bred to a sorrel, your foal colors will be Bay, "red" (sorrel/chestnut), black. And with a solid stud with no color background, you have a 50/50 shot of paint.

It gets more complicated when you do the Breeding stock APHA to the colored APHA.... lol it just gets confusing! lol
